Recipe: Gluten-Free Vega Protein Pancakes

Following up on my last post, here is the recipe I make for my post-workout snack almost every day! They are protein pancakes, made with Vega Performance Protein in vanilla.

Version 1 (gluten-free)

  • 1/4-1/3 cup gluten-free rolled oats (or 3-4 tbsp of oat flour)
  • 1 scoop vanilla Vega Performance Protein
  • 1/4 cup egg whites
  • 1/4 cup unsweetened vanilla Almond Breeze
  • 1/2 ripe banana

Version 2 (gluten-free, vegan)

  • 1/4-1/3 cup gluten-free rolled oats (or 3-4 tbsp of oat flour)
  • 1 scoop vanilla Vega Performance Protein
  • 1/2 cup unsweetened vanilla Almond Breeze
  • 1 banana

Version 3 (gluten-free, low-carb)

  • 1 scoop vanilla Vega Performance Protein
  • 1/2 cup egg whites
  • 1/4 cup unsweetened vanilla Almond Breeze
  • 1/2 ripe banana

Directions:

  1. Place wet ingredients, then dry ingredients into magic bullet/blender/food processor and blend until smooth (Alternatively, for the low-carb version simply mash banana with a fork then mix together the rest of the ingredients).
  2. Heat up a non-stick pan to medium heat.
  3. Pour about 1/4 cup of batter on the heated pan.
  4. When the pancake begins to firm up around the edges and slightly bubble, flip.
  5. Serve and enjoy!

Some other options:

  • Trade in gluten-free flour or oat flour in place of the oats
  • Put blueberries in the batter and cook into the pancake
  • Serve with slices of banana on top
  • Serve with nut butter (My personal favorite! My favorite kind is Once Again creamy almond butter)

 

*Update: I have recently perfected the recipe (version 1 at least)! They have a consistency much more like pancakes — simply delicious (and no need for a magic bullet/blender)! Here is the updated version (although the other versions are still awesome).

  • 3 tbsp oat flour
  • 1 scoop vanilla Vega Performance Protein
  • 1/2 cup egg whites
  •  2 tbsp unsweetened vanilla Almond Breeze
  • 1/2 ripe banana

Start by putting the banana in a bowl and mashing it, then add in the other ingredients and mix before cooking!
